Where to Buy the ingredients
I use several shops online and physical shops which I would like to share with you. Most shops so not ship internationally so please visit them when you are in Tokyo.
Physical SHOPS
TOMIZ
If you are into baking or wagashi making, this is the first shop to go to. Everything you need to make wagashi is here. You can buy shiro-an that is usually not available in your local supermarket in paste of powder form here. TOMIZ is the shop name and the comply is called Tomizawashoten (富澤商店)which is 100 years old. CUOCA
Just like TOMIZ, Cuoca is also a one-stop store for all your baking supplies. In 2017, Cuoca was bought out by Tomizawashoten, so you will find TOMIZ brand items in Cuoca shop. Although they are under the same company, Cuoca shop name still remains and there are two Cuoca Shops in Tokyo. Gyomu Super
This is a Japanese version of COSTCO, where you can get food supplies in big bulks. If you are looking for Rice Flours or Anko in 1 kg bags, This is the place to go. I usually get my rice flours, Sugars and Potato Starches here. The quality is good as it is made in Japan. You can also get Koshian at a very low price, but I do not get mine here as I'm not sure of the quality as the beans are from overseas. Shiro-an is not sold at this shop. Go to Store Finder |

Cotta Online
Originally a small company that sold dessicants, they are now a prominent figure in the online baking ingredients market. You can get most wagashi ingredients here, but there are more stronger in packaging materials. And they are well know for their a vast collection of online baking recipes provided by their assigned ambassadors. I normally buy my wagashi cups and wagashi boxe here.
Anko no Naito(あんこの内藤)
This anko factory located in Mie Prefecture is almost 100 years old. It makes very high quality anko which I love. You can by in small quantities with lower shipping cost here.
Akanemaru(茜丸)
Founded in 1940, this anko factory in Osaka is unique in a way that they carry about 70 kinds of anko all year round. They are more catered to the professionals, maybe more for bakeries than wagashi shops. They also have an English page where you may be able to contact them for anko.
